Chocolate Ice Cream

This is honestly hands down the best chocolate ice cream you will ever have, I promise! It's so rich and creamy it won’t last long in any house!



Ingredients:

2 C heavy cream

3 tbsp unsweetened cocoa powder

5oz semisweet chocolate bits

1 C whole milk

3/4 c sugar

pinch of salt

5 large egg yolks

1/2 tsp vanilla extract

Instructions:

1. in a medium sauce pan warm 1 cup of cream and whisk in the cocoa powder until blended thoroughly. bring to a boil then reduce the heat and simmer for 30 seconds whisking the entire time. remove from the heat and add the chocolate bits, stirring until smooth. then stir in the remaining cream. pour the mixture into a large bowl scraping the edges to remove as much as much as possible. set a mesh strainer ontopof the bowl

2. in the same saucepan warm the milk, sugar and salt. in a separate bowl whisk together the egg yolks. Slowly pour the warm milk into the egg yolks. then scrape it back into the saucepan.

3. stir the mixture constantly over medium heat, scraping the bottoms you stir, until the mixture thickens and coats your spatula. Pour this mixture into the strainer through the strainer and stir into the chocolate mixture until smooth.

4. stir until cool over an ice bath then chill mixture thoroughly in the refrigerator over night.

5. pour mixture into your ice cream machine and freeze according your ice cream makers manufacturing instructions. Serve as soft serve immediately or place in your freeze to let it continue to harden.


Notes: for storing I like to use an airtight container and Tovolo makes great ice cream containers
