Chewy Oatmeal Chocolate Chip Coconut Cookies

If you’re looking for a way to change up your average oatmeal cookies, try these! This is a one bowl recipe and the dough doesn’t need to be chilled overnight, so they can be made in a moments notice when your craving kick in! The texture and flavor is just what your needing!
Ingredients:
1 C butter
1/4 C granulated sugar
3/4 C Brown sugar
2 eggs
1 TBSP vanilla extract
2 C minus 2tbsp all purpose flour
1 tsp baking soda
1 tsp salt
1 1/2 C old fashioned oats
1 1/2 C unsweetened coconut flakes
1 1/4 C semi sweet chocolate chips
1 1/4 C milk chocolate chips
flaky sea salt for sprinkling
Instructions:
preheat oven to 350 degrees F, line two pans with parchment paper and set aside.
in a large stand mixer bowl fitted with paddle attachment beat together room temp butter and sugars until combined. Add eggs one at a time then add the vanilla extract and mix until creamy.
Add the flour, baking soda and salt and beat until just combined. With a rubber spatula fold in oatmeal, coconut and chocolate by hand.
roll dough into 2tbsp size balls and place on prepared baking sheet two inches apart. Then flatten the dough to about a 1/2 in thickness. Sprinkle with flaky salt.
Baking one tray at a time, transfer baking sheet to oven and bake for 5 minutes, remove and bang pan on the counter top 2-3 times until flattened, place them back in the oven to finish baking for 5 more minutes or until they are golden brown.
let them cool a few minutes before transferring them to your cooling rack.
