Cornbread Muffins

Corn Bread muffins are one of my favorite muffins to bake because besides being savory they can also be sweet! There is such a variety of ingredients to add – corn kernels, cheese, jalapeños, bacon etc. or for the sweeter side you can add blueberries or strawberries to your mix or just smear lots of honey and/or jam on top of a buttered muffin. They work as a snack, or a side to breakfast, lunch and dinner. Here’s my recipe for the most delicious corn bread muffins!

Ingredients:
1 C all purpose flour
1 1/4 C yellow cornmeal
2 tbsp sugar
3 tsp baking powder
½ tsp salt
1 C buttermilk
4 tbsp butter
1 egg
3 tbsp honey
Instructions:
1. Preheat oven to 400 degrees F and prepare muffin tin (12) with paper baking wrappers or spray pan cups with oil, set aside.
2. In a large mixing bowl, combine dry ingredients (flour, cornmeal, sugar, baking powder and salt). Mix well and set aside.
3. Melt butter (microwave or stove top) add buttermilk and mix well, then add the egg and whisk until well combined.
4. With a rubber spatula gently fold in the dry ingredients until just combined (this is also when you would mix in your add-ons like corn kernals, blurberries, cheese etc.).
5. Use a medium size scoop to fill muffin tin cups ¾ full of batter. Place in the oven and bake for about 15 minutes or until tops are golden brown. Let cool for a few minutes and serve warm (with my favorite whipped honey butter – softened butter slightly whipped with honey) and enjoy!!
