Grilled Peaches

Looking for a light and fresh summer dessert for two, look no further you have found it! It’s super easy and sure to impress. I first made this a couple years ago for my husband for our anniversary and it was to die for! It’s a great note to end on, on a hot day because it’s not overly heavy or filling. this dessert has it all - It’s warm and melty, sweet and salty, gooey and chewy, and a little messy!
ingredients:
one ripe peach
2 tsp turbinado sugar
2 slices of prosciutto
2 small scoops of vanilla ice cream
instructions:
cut peach in half and remove pit. Slice 1/4” into the open side of the peaches making a grid pattern to allow sugar to drip into the peach add one tsp of sugar to each peach half, let side at room temp for 10 minutes
in a pan cook prosciutto until slightly crunchy, set aside to cool then chop into little bits
heat grill pan on stove top (or turn on bbq)
once hot place peaches open side down on grill for 5 minutes then flip over and grill another 5 minutes until peach feels soft enough to cut with a spoon.
remove from heat add a scoop of vanilla ice cream on each half and sprinkle with cooked prosciutto bits and serve right away!
