Kids HEALTHY banana muffins

If your looking for a healthy muffin recipe, you've found it! Let's face it, muffins are pretty much cupcakes without frosting, they are definitely not a healthy option for breakfast. don't get me wrong, I think muffins are delicious, with their streusel toppings and delicious fillings, but it's nice to have a healthy option. I like this recipe because I can let my son eat them and not feeling guilty about feeding him straight sugar, especially since he loves them so much he will eat a few at a time, his record is 5 in one day!

Because these banana muffins don't have added sugar or sweeteners it’s important to make sure you use very ripe bananas otherwise they will be pretty bland. So the browner your bananas the better! Also if you want them to be lighter you can do a combination of whole wheat flour and all purpose flour (whole wheat tends to make things more dense).
These muffins are made in just one bowl which makes them perfect for letting your kiddos help out!
Ingredients:
3 large ripe bananas
1egg
1/2 cup butter or melted coconut oil
1 cup milk or almond milk
1tsp vanilla
1tsp cinnamon
1/4 tsp salt
2 cups whole wheat flour
1 tsp baking soda
extra dark chocolate chips (optional)
Instructions
Preheat oven to 325 degrees
Place 24 paper wrappers in your muffin tins and set aside.
In a medium size bowl mash bananas with a fork. Add the rest of the wet ingredients to the bowl and use a hand mixer on medium speed until well combined. Add dry ingredients and mix again until incorporated.
Distribute mixture (about 1/4 cup) into the muffin tins and sprinkle 2 or 3 (or as many you want) chocolate chips on top of the muffins.
Place muffin tins into oven and bake for 25-30 minutes or when toothpick comes out clean.
Let muffins cool for a few minutes then transfer to a wire rack to finish cooling
healthy optional add-ins:
- blueberries
- chopped nuts
- almond extract
- peanut or almond butter (spread on top)
