Power Greens & Banana Pancakes

These are the best tasting healthy pancakes for your kids (or yours) breakfast. I make a batch every week and throw them in the freezer to reheat weekday mornings with a side of scrambled eggs. They are full of rich dense nutrients from leafy greens blended into the mixture. I have been making these for my son since he started eating. They are one of his very favorite things to eat, he would eat them for every meal if I would let him.
Ingredients
2 Ripe bananas
2 Eggs
2/3 Cup Pamela’s Pancake Mix
1 TSP cinnamon
5oz Power Greens (mixture of spinach/kale/bok choy)
Instructions:
In a blender combine all the ingredients until completely smooth. Oil pan to prevent sticking. Then pour a 1/4C amount of batter into a pan on low heat and flip when the mixture starts to bubble. Cook thoroughly. Both sides should be a golden brown.
It’s that easy!
A few notes:
I buy the 5ounce boxed lettuce called “power greens” but you can do just spinach, whatever you can find.
Let cool before storing in the freezer
You can use any pancake mix, I just prefer Pamela’s or birch blenders gluten free mix
I also sometimes add sliced bananas or blueberries to the pancakes
