S’mores Cookie Bars

Just in time for your summer back yard campout - graham cracker crust s’mores chocolate chip cookie bars! This is a two bowl, one pan recipe meaning easy to make, little cleanup and not having to spend the day in the kitchen baking batch after batch of cookies.
My sister throws an annual 4th of July party and I’m always in charge of making dessert, so this year Ive decided to make these bars and fruit hand pies. I figure I’ll get everyones dessert cravings offering both chocolate and fruit options. Over the years I’ve also learned that when having an outdoor party where people are playing games it’s usually so eat dessert that doesn’t require sitting down with plates or forks to eat them. But they are delicious with a side of ice cream if you don’t mind the dishes.
ingredients:
crust:
1/2 c melted butter
1 1/2 c graham cracker crumbs (1 package of crackers)
cookie dough:
10 tbsp butter, softened
1/2 c granulated sugar
1 1/2 c brown sugar
1 tbsp vanilla
2 large eggs
2 1/2 c all purpose flour
1 tsp salt
2 1/4 tsp baking powder
1/2 c semi sweet chocolate chips
1/2 mini marshmallows
topping:
1 c milk chocolate chips
3 graham crackers, broken into small pieces
1 c mini marshmallows
instructions:
preheat oven to 350 degrees F, line 9x13 baking dish with parchment paper, set aside.
In a medium bowl combine melted butter and cracker crumbs with a rubber spatula until combined. Then pour into baking dish and spread crust with pressure, evenly covering the bottom. Set aside. using your stand mixture with the paddler attachment combine butter and sugars. Then add eggs mixing one at a time, then pour in vanilla. Stop mixer and add dry ingredients then slowly mix until just combined. Add marshmallows and chocolate and mix by hand with a rubber spatula.
spoon cookie dough into the pan and spread evenly over crust, sprinkle the toppings over the cookie dough layer, coating evenly. place in oven and bake for 50 minutes then turn on the broiler to “roast” the marshmallows for about 1 minute or until golden. BE CAREFUL NOT TO BURN GRAHAM CRACKERS OR CHOCOLATE
cool completely before cutting into.
